Attack Of The Spring Rolls

Prep Time: 15-25 Minutes
Cook Time: Zero.
Serves: As many as you want. 3/person was filling…
Difficulty: If you’ve got man-hands, this might be an issue.
Recommended Sides: Thai sweet chili sauce, spicy and/or fire chicken of outer space

Ingredients:
Rice Paper Wraps
Fresh Basil Leaves
Sliced Cucumber(s)
Shredded Carrots
Sliced Avocado(s)
Sliced Iceberg Lettuce
Sliced Almonds/Chopped Peanuts
Chopped Spring Onion
Choice of Meat, if you desire. We used:
Smoked Salmon
Imitation Crab Sticks
Fire Chicken of Outer Space

Step 1: SLICE’N’DICE.
Slice all ingredients (except rice paper wraps) pretty thin so that they wont be too hard to break through the wraps when rolling. We also cut ours to be about 3-4 inches in length.

Step 2: Warm it, Soak it, Bop-It (just kidding)
Warm about 4 cups of water in a sauce pan or bowl until its just hot enough to be a little bit uncomfortable to hold you hands in for a while. (Think of how hot your mom/dad used to make the water when hand-washing dishes….). Soak one rice paper wrap at a time in the water until soft, or until markings on the rice paper disappear. Once soft, pull out of the water and place on plate or flat surface for roll-prep.

Step 3: They see me rollin’
Once the rice paper wrap is soft and ready to roll, grab your ingredients of choice and prepare the rolls. You can really do them in any order… my preferred choice was to prepare in the following order: soft rice paper wrap, two leaves fresh basil, a small handful of sliced lettuce, meat/seafood of choice, sliced carrots, spring onions, sliced almonds, sliced avocado, ROLL IT.

Step 4: Enjoy and keep rolling.
About 3 or 4 per person was filling, but since the ingredients are already chopped, you might as well continue rolling for tomorrow’s lunch leftovers.
